It is not very often that someone at work would give me some fresh homemade pasta. This was the first time. It was a lovely surprise. He and his wife are food lovers and enjoy cooking at home.
I brought the pasta home tonight and asked my partner to make our dinner. My request is simple. Make sure we do justice to my colleague's fresh pasta, cooked to al dente in a simple sauce so we can still taste the texture of the fresh pasta.

The other Ingredients to go with the fresh pasta - cherry tomatoes, capers and smoked salmon. 3 eggs gently whisked with a fork and seasoned with sea salt and cracked black pepper. 
In a large stockpot, fill with cold water and salt. Bring it to rapid boiling. Toss in the fresh pasta. Gently stir the pasta and cook until al dente. Drain and rinse in cold water.

Oh, yes. We are cooking in our PJ! It is winter in Melbourne and freaking cold. 
Next, reheat the stock pot and gently heat some extra virgin oil before tossing in the pasta to reheat. Remove and place in a large bowl. Mix in the egg sauce, smoked salmon, capers and cherry tomatoes. Shave some parmesan cheese and sprinkle sea salt and cracked black pepper to taste. I added a bit of smoked chilli oil in my bowl of pasta. Simple and tasty. Nom Nom.
